Masumi Sanka “Mountain Flower” Junmai Daiginjo is a refined sake from the historic Miyasaka Brewing Company, established in 1662 in Suwa, Nagano Prefecture. Renowned for its pioneering spirit, the brewery gained prominence in 1946 with the discovery of Yeast No. 7, a strain now widely used across Japan. Sanka, meaning “mountain flower,” captures the essence of alpine meadows in spring. Crafted using Yamada Nishiki rice polished to 45% and fermented with Masumi’s proprietary No. 7 yeast, this Junmai Daiginjo exemplifies the brewery’s commitment to traditional craftsmanship and innovation.
On the nose, Sanka offers bright yet gentle aromas of white peach, banana, and steamed rice, with subtle hints of sour cream. The palate reveals a mild sweetness complemented by the umami of rice, balanced by a touch of acidity and bitterness.
