THE VINEYARD Right Bank of the Cher River, 4ha on ancient Turonian limestone bedrock; yields are about 50 hL/ha.
SOIL Clay with chalky flint
VINE AGE 10-45 years
FERMENTATION & AGING Long, slow fermentation in homemade oak barrels of 228, 350 & 500L, 10% of which is new; 1g/hL sulfur added at pressing. Occasional batonnage during elevage, and racked only once during 12 months’ aging. Bottled by gravity, unfined and unfiltered with 2g/hL sulfur at bottling.
