Dubonnet is a French wine-based apéritif flavored with spices and quinine. Quinine, which is a natural white crystalline alkaloid, gives it a bitter taste. Dubonnet Red mixes perfectly with lemonade.
Dubonnet Rouge is a delicious sweet wine aperitif. It’s a blend of fortified red wine, spices and quinine. Quinine is a bark extract from the Chincona tree used as a bittering agent in tonic type drinks and it’s found in sweet wines, vermouths and amaro. In the past it was used as a medicinal botanical, famous for curing malaria and high fevers. In drinks it adds earthy flavors. Dubonnet Rouge was created by chemist and wine merchant Joseph Dubonnet to make quinine more pleasant for the soldiers battling malaria in South Africa. This drink is lightly sweet with prune flavors. It’s spicy with a gentle bitter finish.
