Cabal Mezcal Salmiana Jaguar Head 700ml, sourced from the deserts of San Luis Potosí, undergoes a meticulous and time-honored process to extract the truest flavor profiles of a ripe Salmiana agave. The 14-year-old agaves are cooked for 7 days in a 200-year-old wood and brick oven, while steam seeps through Sabine wood floors. From there, the maceration process begins using a Roman concrete double tahona, followed by a large single tahona stone for optimal extraction. The resulting aguamiel is then fermented in open air vats using natural fermentation ignited with pulque from the same Salmiana, before being double distilled through a 200-year-old copper still. The end result is a bright, clean, and vegetal nose with robust aromas of crisp green bell pepper, fresh cut grass, and lemon peel. On the palate, hints of olive and fresh Serrano pepper awaken
