VINE AGE 80 Years; yields are around 15 hL/ha
FERMENTATION Slow, controlled pressing; juice transferred to barrique for fermentation without addition of sulfur.
AGING Wines remain in barrique for 16 months; bottled by gravity flow with very light filtration, finished with 60 ppm sulfur
