VINEYARD Untertürkheimer Herzogenberg in Württemberg; single plot Grosse Lage owned by the Wöhrwag family, related to Jan’s family. The site has a 30% grade, at about 280m altitude, southwest-facing. Heavy green-harvesting performed to limit yield and achieve perfect ripeness.
SOIL Gypsum keuper – ancient sedimentary rock rich with fossils
VINE AGE 30+ years
FERMENTATION 100% destemmed very delicately, grapes allowed to rest 3-5 days until their natural weight produces juice. For 2 weeks, 15L of juice is removed and poured over the top twice per day. Skins are then pressed, and the free-run and press juice are combined. Fermentation occurred in one new barrique and one 5-year old tonneaux.
AGING Aged in barrique and tonneaux for 16 months. Wines are then combined and lightly filtered, then lightly sulfured.
