Vinification Is inspired by the rhythmic protocol of Rudolf Hauschka. The Rhythmic exposure to the polarities. Light, darkness, warmth, cold, movement & rest. Messaging into the fermentation process the same vital forces the plant lives through. 21 days on the skins 1 year of Elevage, declassified to vino rosso, elevage was not in wood.
