Description
THE VINEYARD The family vineyard of Stefano’s grandfather, very low yielding, 280m above sea level. First harvested by Stefano in 2019, but first vintage bottled separately is 2020.
VINE AGE 70+ years of age
SOIL Sandy soils (around 45%) with higher percentage of limestone and clay than Sanche.
FERMENTATION Fermented with indigenous yeasts (pied de cuvée) in oak vat with submerged cap for duration of fermentation, 1-2 weeks. Malo-lactic completed in tonneau.
AGING Returned to large oak vats after malo-lactic and aged 32 months before bottling.
