Description
We offer the Extra Brut for your consideration, as it is perhaps the most bright, clear prism through which to view her intentions. With vines up to 55 years of age sitting in the liveliest of vineyards, the grapes are small and intensely flavored. Everything is harvested by hand, and allowed to ferment naturally. By virtue of her cold cellars, malo-lactic conversion does not occur, so the wine is quite bright while still possessing the breadth and subtle whiff of smoke of great Meunier vines in clay. Spending 27 months on the lees adds an extra layer of complexity and softness, balancing out the natural brightness akin to the great Alexandre Filaine wines.
