Description
Beginning in 2013, Giovanni decided to produce a Langhe Nebbiolo from what he deemed the least interesting parts of Paiagallo and Grinzane Cavour, the latter of which historically provided the bulk of the blend. Fully de-stemmed and macerated for 30-40 days. Vertical hand-pressed into concrete and Slavonian oak for aging. About 2000 bottles are produced annually.
