Description
Cathiard has 3/4 of a hectare of fifty-plus year-old vines in Malconsorts, where there are deep red clay soils. Entirely de-stemmed, and allowed to cold-soak for 10 days. Fermented in tank then aged 15-18 months in 50-75% new oak.
